Drop-off catering

Drop-off catering is food that is cooked, packed, delivered, and set out on the client’s table, with no staff staying to serve it. The caterer arrives, arranges the spread, and leaves; the client and their guests handle the rest.

Why it matters to a small caterer
Drop-off is the volume end of catering. Margins per job are thinner than an event, but the work is repeatable, the day is shorter, and a corporate office that liked its first lunch will reorder every week without a proposal. For a caterer building a business without staff, it is often the only service style that pays before there is a team to pay.
The margin does not live where new caterers expect. Food is the smallest part of a delivered order. Packaging, disposable serviceware, labels, sternos and pans, the shopping trip, the prep block, and the drive are all costs a plated event hides inside its service charge, and a drop-off price has to absorb every one of them line by line. Cost the whole delivered order per person, not the sandwich.
Where drop-off ends and buffet begins
The moment someone stays to tend the line, refill pans, and hold temperature, you are running a staffed buffet and should be charging for one. The food may be identical. The labor is not, and neither is the liability of holding food hot for two hours in a room you do not control. Quote the two as separate products so a client choosing between them can see what the staffing costs.
The two terms that keep it profitable
A stated order minimum, so the smallest job you accept still pays for the trip. And delivery as its own named charge rather than a favor folded into the per-head price, because a hidden delivery cost makes your food look expensive for no reason and gives you nothing to point at when a client asks why the far-side-of-town order costs more.
