Food handler certification

Food handler certification is short food-safety training with an exam, held by the people who prepare and serve food. A separate, longer food protection manager certification is commonly required for at least one person responsible for an operation. ServSafe is the best known of the programs that offer both.

Why it matters to a small caterer
This is a gate on working at all rather than a nice-to-have. Health departments require it of staff in most places, and venues and corporate clients ask about it as part of their own compliance, alongside your permit and your insurance certificate. It is also the cheapest and fastest credential in the whole startup chain, which makes putting it off a strange decision.
Two practical notes. First, the requirement is set state and often county by county. Which program is accepted, who needs which level, and how long a card lasts all vary, so your local health department is the authority. Second, certifications expire quietly. Keep the dates for every person on your team where you will see them, because a lapsed card discovered during an inspection is the same as never having had one.
Handler and manager are different things
A handler card is a few hours of training on the basics: temperature control, cross-contamination, personal hygiene, cleaning and sanitizing. A manager certification is longer, harder, and covers the systems behind those basics, and it is the one usually attached to a person rather than to a shift. A one-person catering business frequently needs the manager level rather than the handler level, which is a common and expensive surprise.
Train casual staff too. Event servers hired for a Saturday are still handling food in your name, and whatever your jurisdiction requires of them is your problem on the day.
