How to price a taco bar for 100

The taco bar is the most-requested quote in catering: crowd-pleasing, scales cleanly, and clients think it should be cheap. Here is what a realistic 2026 number looks like for 100 guests, and where caterers quietly lose money on it.

What is actually in that number

Two proteins, tortillas, rice and beans, three or four salsas, toppings, chips, plus the things clients never picture: chafing fuel, serving utensils, foil pans, labels, and the drive. Consumables on a taco bar run higher than the menu suggests because every topping needs its own vessel.

The protein tier moves the range most. Chicken and carnitas sit at the budget tier; carne asada or shrimp push you a tier up and can add several dollars per person on their own.

Drop-off or staffed?

The numbers above are drop-off: you deliver, set up, and leave. A staffed taco bar (someone flipping tortillas and keeping pans full) moves you to buffet-style pricing, roughly half again more per person. Quote them as two different products, because they are.

The mistake: forgetting your own hands

Even drop-off carries labor: shopping, prep the day before, morning assembly, the delivery window. If your quote only marks up ingredients, the job pays for the party and not for you. Load a labor percentage onto every portion before you set the margin.
